What do you do when you’ve got a serious cookie craving? Make these peanut butter chocolate chip cookies, of course!
One Sunday afternoon a little while ago, I got a serious craving for a peanut butter cookie. I didn’t want just any old regular peanut butter cookie though. I wanted it to be soft, full of peanut butter flavor, but with just enough texture that you knew it was a peanut butter cookie.
Now, it’s sad to say, but I’ve had some bad peanut butter cookies in the past. How do you know they’re bad? Well, first of all, they’re dry. Second, they’re small. And third, they don’t have a lot of peanut butter flavor. Let me tell you, you won’t find any of these issues with these cookies. I had to add chocolate chips because they’re my kiddo’s favorite. But if you don’t want them, you could replace them with chopped peanuts instead. Or just skip it altogether!
When it comes to the peanut butter you should use, I would avoid using natural peanut butter. Like the ground straight from the machine kind. I used Skippy Natural peanut butter and I really liked the taste and texture of the cookie that it made. But I’m sure you can use regular peanut butter. Chunky peanut butter would be awesome in these peanut butter chocolate chip cookies, too!
These cookies don’t cook like any old regular cookies. You may notice that they take a little longer to get brown. But don’t over-bake them. In fact, if they’re not totally lightly golden brown around the edges, don’t worry. You can let them sit on the baking sheet for a few minutes after you get them out and they will still set up. I’m just imagining their softness now and wishing that I had some!

Peanut Butter Chocolate Chip Cookies
These are the perfect cookies to cure any cookie craving. Give 'em a try!
Ingredients
- 1 cup unsalted butter, softened at room temp
- 1 cup peanut butter (smooth or creamy)
- 1 cup granulated sugar
- 1 cup dark brown sugar (light brown works, too)
- 2 eggs, at room temp
- 2 teaspoons vanilla extract
- 2 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
- 1 cup chocolate chips (semi-sweet or milk chocolate)
Instructions

Preheat oven to 350 F and line two baking sheets with parchment paper.

Cream together the butter and the peanut butter for about a minute. Add sugars and cream for another minute or two. Add in eggs and vanilla extract and mix until just combined. Add in dry ingredients and mix until flour is incorporated, then add chocolate chips.

Scoop onto cookie sheets (about 12 cookies per sheet, about 2 tablespoons of dough per cookie) and bake for 12-15 minutes. Cookies are done when very lightly browned around the edges. Remove from oven and let sit on cookie sheet for about 5 minutes to help them set before removing to cooling rack. Enjoy!
